Crispy fried tofu tossed in kecap manis and sambal
Serves: 4
Ingredients:
- 500g firm tofu
- ¼ cup cornflour
- ¼ cup rice flour
- 1 tsp salt
- Vegetable oil for frying
Sauce:
- 3 tbsp kecap manis
- 1½ tbsp of Sambal Sambal Rica Rica
- 1 tbsp soy sauce
- 1 tsp sesame oil
- 1 tsp brown sugar
- 2 cloves garlic, minced
- 1 tsp grated ginger
Garnish:
- Spring onions, sliced
- Toasted sesame seeds
- Fried shallots (optional)
Instructions:
- Drain the tofu and remove excess moisture by wrapping tofu in clean paper towels and placing a heavy object on top (i.e. a cast iron pan). This removes excess moisture, helping the tofu become extra crispy when fried and allowing it to absorb the sauce more effectively.
- Cut tofu into bite-sized cubes and toss with cornflour, rice flour and salt.
- Fry at 180°C until crisp and golden.
- In a pan, sauté garlic and ginger for 30 seconds.
- Add the remaining sauce ingredients and simmer for 1 minute.
- Toss the tofu through the sauce until lightly coated.
- Garnish with spring onions, sesame seeds and fried shallots.
Serving suggestions - Serve over shredded cabbage with cucumber and fresh herbs.
