Grilled halloumi with quinoa, roasted vegetables and a sweet-spicy sambal honey glaze

Ingredients:
- 400g halloumi, sliced
- 1 tbsp olive oil
Sambal Honey Glaze:
- 2 tbsp honey
- 1½ tbsp Sambal Sambal Rica Rica
- 1 tsp lime juice
Roasted Vegetables:
- 1 zucchini, sliced
- 1 red capsicum, chopped
- 1 red onion, cut into wedges
- 1 cup sweet potato, diced
- 2 tbsp olive oil
- Salt and pepper
- 1 tsp garlic powder
Quinoa:
- 1 cup quinoa
- 2 cups vegetable stock
Garnish:
- Fresh coriander
- Toasted sesame seeds
- Lime wedges
Instructions:
- Chopped vegetables and toss generously with olive oil, salt, pepper, and garlic powder. Roast the chopped vegetables at 200°C for 25–30 minutes until caramelised.
- Rinse quinoa and cook in vegetable stock until fluffy.
- Mix together the honey, sambal, and lime juice.
- Heat a grill pan over medium-high heat. Brush halloumi with olive oil and grill for 2–3 minutes per side.
- Brush the sambal honey glaze over the halloumi during the final minute of cooking.
- Serve over quinoa with roasted vegetables and garnish with coriander, sesame seeds and lime.
