Grilled Halloumi with Sambal Honey Glaze

Grilled halloumi with quinoa, roasted vegetables and a sweet-spicy sambal honey glaze

Serves: 4

Ingredients:

  • 400g halloumi, sliced
  • 1 tbsp olive oil

Sambal Honey Glaze:

  • 2 tbsp honey
  • 1½ tbsp Sambal Sambal Rica Rica
  • 1 tsp lime juice

Roasted Vegetables:

  • 1 zucchini, sliced
  • 1 red capsicum, chopped
  • 1 red onion, cut into wedges
  • 1 cup sweet potato, diced
  • 2 tbsp olive oil
  • Salt and pepper
  • 1 tsp garlic powder

Quinoa:

  • 1 cup quinoa
  • 2 cups vegetable stock

Garnish:

  • Fresh coriander
  • Toasted sesame seeds
  • Lime wedges

 Instructions:

  1. Chopped vegetables and toss generously with olive oil, salt, pepper, and garlic powder. Roast the chopped vegetables at 200°C for 25–30 minutes until caramelised.
  2. Rinse quinoa and cook in vegetable stock until fluffy.
  3. Mix together the honey, sambal, and lime juice.
  4. Heat a grill pan over medium-high heat. Brush halloumi with olive oil and grill for 2–3 minutes per side.
  5. Brush the sambal honey glaze over the halloumi during the final minute of cooking.
  6. Serve over quinoa with roasted vegetables and garnish with coriander, sesame seeds and lime.
